preserving eggs?

hello, everybody...

we are swimming in eggs... a dozen a day... and are giving loads away and eating so many and while that is all well and good, i would like to preserve some for a rainy day. preferably without refrigeration.

any ideas?

(i apologize if this has been discussed to death before, maybe a point in the right direction then??)

    One cool thing you can do is make egg pasta and dry it. there should be lots of recipes on the web. You will want a pasta machine if you're going to do a lot, but there are a lot of them out there because every kitchen had to have one some years back but no one actually uses them. Check thrift stores or just ask around. Use real semolina flour, it makes a big difference.

      That was actually my first thought, seems like perfect- i mean, how can you have too much pasta?! and you're right about the pasta maker- everybody had to have one a few years back... but they're big and bulky and perfect for the garage sales that will be coming up...

      i guess i balked thinking of the combination of the table full of drying pasta and my 3 yr old who can't/won't keep her hands out of ANYTHING... it might actually be a lot of fun... like playdough- new creative shapes!
